10:00AM - 1:00PM. Ox-Box School of Art. Who hasn’t been seduced into buying a wagonload of fresh produce from the farmer’s market...but what to do with it once you get it all home? Chef Erin will hit up the Holland Farmer’s Market bright and early, and together we’ll examine the morning’s bounty, discussing what’s in season, attributes and possibilities for each ingredient. We’ll cover some kitchen tips & techniques, talk about various flavor profiles and how to construct menus within them, and follow loose recipes, discussing how to improvise within them throughout the changing seasons, all while we work together to prepare a delicious, nutritious lunch. Last year we constructed Erin’s Everything Golden market salad with ginger-maple citronette, a tarragon-mustard new potato salad with arugula, green beans & parmesan, and lemon-tahini roasted eggplant tossed with wilted beet & radish greens–who knows where we’ll end up this time! Seasonal Improvisation runs on Saturday, August 8, from 10AM-1PM, taught by Ox-Bow’s head chef Erin Chapla and costs $80. Art on the Meadow is a unique program, providing an intergenerational space for students to come together in the inspiring natural environment at Ox-Bow for half day, one day, or short term multi-day classes. Our workshops are geared toward teen and adult makers of all experience levels, age 13 and up. Art on the Meadow workshops offer participants an opportunity to connect traditional art and craft processes with contemporary ideas and approaches to artmaking. We strive for our workshops to be imaginatively challenging and logistically accessible for our West Michigan neighbors.
